- 1 teaspoon lemon zest
- 1 teaspoon fresh thyme leaves
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss carrots with olive oil, salt, pepper, and thyme until evenly coated.
- Spread carrots on the baking sheet and roast for 25 to 30 minutes until tender and golden.
- While roasting, whip ricotta with lemon zest and a drizzle of olive oil until smooth and airy.
- Warm honey in a small saucepan, stir in chili flakes, and let infuse for a minute.
- Spread whipped ricotta on a serving platter and top with roasted carrots.
- Drizzle hot honey over the carrots and finish with a sprinkle of flaky salt.
