Instructions

  1. Preheat Your Equipment: Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with a little olive oil, wrap in foil, and roast for 35–40 minutes until soft and fragrant.
  2. Combine Ingredients: While garlic roasts, place cubed potatoes in a large pot, cover with cold water, add a pinch of salt, bring to a boil, then simmer until very tender, about 15 minutes.
  3. Prepare Your Cooking Vessel: Drain potatoes and return them to the warm pot to steam-dry briefly, which helps keep the mash fluffy.
  4. Assemble the Dish: Squeeze the roasted garlic cloves out of their skins and add them to the potatoes. Add the butter, then begin to mash using a potato masher.
  5. Cook to Perfection: Gradually stir in the warmed heavy cream and milk until you reach your desired consistency, mashing gently to avoid overworking the potatoes.
