Description
Creamy, buttery mashed potatoes infused with sweet, caramelized roasted garlic, perfect as a cozy side for weeknight dinners or holiday feasts.
Ingredients
Scale
- 2 pounds (about 900g) potatoes, peeled and cubed
- 1 whole head garlic, roasted until golden and soft
- 4 tablespoons (60g) unsalted butter
- 1/2 cup (120ml) heavy cream, warmed
- 1/4 cup (60ml) milk, warmed
- 1½ teaspoons salt, or to taste
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon fresh parsley, finely chopped
Instructions
- Preheat Your Equipment: Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with a little olive oil, wrap in foil, and roast for 35–40 minutes until soft and fragrant.
- Combine Ingredients: While garlic roasts, place cubed potatoes in a large pot, cover with cold water, add a pinch of salt, bring to a boil, then simmer until very tender, about 15 minutes.
- Prepare Your Cooking Vessel: Drain potatoes and return them to the warm pot to steam-dry briefly, which helps keep the mash fluffy.
- Assemble the Dish: Squeeze the roasted garlic cloves out of their skins and add them to the potatoes. Add the butter, then begin to mash using a potato masher.
- Cook to Perfection: Gradually stir in the warmed heavy cream and milk until you reach your desired consistency, mashing gently to avoid overworking the potatoes.
- Finishing Touches: Season with salt and freshly ground black pepper to taste, then stir in the chopped parsley for brightness.
- Serve and Enjoy: Transfer to a serving bowl, top with an extra pat of butter or a drizzle of olive oil if desired, garnish with more parsley, and serve hot.
Notes
- Warm your dairy before adding to the potatoes to keep the mash light and fluffy.
- For extra-smooth potatoes, use a ricer or food mill instead of mashing by hand.
- Roast the garlic slowly until soft and golden to develop sweet, caramelized flavor.
- Adjust cream and milk to reach your preferred texture, adding more for looser mash or less for a firmer mash.
