  • 1 medium cucumber, sliced
  • 1 cup shredded carrots
  • 1 large avocado, sliced
  • 1 small red onion, thinly sliced
  • 2 medium chicken breast pieces (about 300 grams total)
  • 2 tablespoons olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat a grill pan or skillet over medium heat and lightly brush with olive oil.
  2. In a small bowl, combine the remaining olive oil, lemon juice, salt, and black pepper to make the dressing.
  3. Season the chicken with a little salt and pepper, then place it in the hot pan and cook for 6 to 7 minutes per side until fully cooked and golden.
  4. Let the chicken rest for 5 minutes, then slice it thinly.
  5. In a large bowl, layer the romaine lettuce, cherry tomatoes, cucumber, shredded carrots, avocado, and red onion.
