- 1 large avocado, sliced
- 1 small red onion, thinly sliced
- 2 medium chicken breast pieces (about 300 grams total)
- 2 tablespoons olive oil
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat a grill pan or skillet over medium heat and lightly brush with olive oil.
- In a small bowl, combine the remaining olive oil, lemon juice, salt, and black pepper to make the dressing.
- Season the chicken with a little salt and pepper, then place it in the hot pan and cook for 6 to 7 minutes per side until fully cooked and golden.
- Let the chicken rest for 5 minutes, then slice it thinly.
- In a large bowl, layer the romaine lettuce, cherry tomatoes, cucumber, shredded carrots, avocado, and red onion.
- Place the sliced chicken over the vegetables.
- Drizzle the dressing evenly over the salad and gently toss to combine. Serve immediately.
