- 1 can unsweetened almond milk (or heavy cream)
- 8 oz sharp white cheddar cheese, shredded
- 4 oz mozzarella cheese, shredded
- 1/4 cup almond flour or crushed pork rinds (substitute for panko bread crumbs)
- Salt and black pepper to taste
- 1/4 teaspoon paprika (optional)
- Cooking oil or cooking spray (for greasing the baking dish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish with oil or cooking spray.
- Steam cauliflower florets until just fork-tender, about 5–6 minutes. Drain and set aside.
- In a large skillet over medium heat, melt butter and sauté chopped spring onion until soft and fragrant, about 2 minutes.
- Stir in almond flour to form a roux. Slowly whisk in almond milk (or cream) and stir until thickened, about 3–4 minutes.
- Add sour cream, salt, pepper, and paprika. Stir until combined and smooth.
- Mix in the shredded cheddar and mozzarella cheeses until melted and creamy.
- Gently fold in steamed cauliflower, shrimp, and crab meat until evenly coated in the cheese sauce.
- Pour mixture into the prepared baking dish and spread evenly.
- Top with almond flour or crushed pork rinds for a golden crust.
- Bake uncovered for 20–25 minutes, or until bubbly and lightly browned on top.
- Let cool slightly before serving. Garnish with extra spring onions if desired.
