  • 4 tablespoons butter

  • 1 spring onion, chopped
  • 1 can unsweetened almond milk (or heavy cream)
  • 8 oz sharp white cheddar cheese, shredded
  • 4 oz mozzarella cheese, shredded
  • 1/4 cup almond flour or crushed pork rinds (substitute for panko bread crumbs)
  • Salt and black pepper to taste
  • 1/4 teaspoon paprika (optional)
  • Cooking oil or cooking spray (for greasing the baking dish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish with oil or cooking spray.
  2. Steam cauliflower florets until just fork-tender, about 5–6 minutes. Drain and set aside.
  3. In a large skillet over medium heat, melt butter and sauté chopped spring onion until soft and fragrant, about 2 minutes.
  4. Stir in almond flour to form a roux. Slowly whisk in almond milk (or cream) and stir until thickened, about 3–4 minutes.
  5. Add sour cream, salt, pepper, and paprika. Stir until combined and smooth.
  6. Mix in the shredded cheddar and mozzarella cheeses until melted and creamy.
  7. Gently fold in steamed cauliflower, shrimp, and crab meat until evenly coated in the cheese sauce.
  8. Pour mixture into the prepared baking dish and spread evenly.
  9. Top with almond flour or crushed pork rinds for a golden crust.
  10. Bake uncovered for 20–25 minutes, or until bubbly and lightly browned on top.
  11. Let cool slightly before serving. Garnish with extra spring onions if desired.
