These buttery shortbread cookies are crisp on the edges, tender in the center, and melt gently in your mouth. Made with just a handful of simple pantry ingredients, they deliver rich flavor and classic texture in every bite.
Ingredients
Scale
- 1 cup (226 grams) unsalted butter, softened
- 1/2 cup (100 grams) granulated sugar
- 2 cups (250 grams) all purpose flour
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat oven to 325 degrees Fahrenheit (163 degrees Celsius) and line a baking sheet with parchment paper.
- In a large bowl, cream the softened butter and granulated sugar until light and smooth. Mix in the vanilla extract.
- Gradually add the all purpose flour and salt, mixing just until a soft dough forms. Do not overmix.
- Lightly flour a work surface and roll the dough to about 1/2 inch thickness.
- Cut into desired shapes and place onto the prepared baking sheet, leaving slight space between each cookie.
- Bake for 18 to 22 minutes until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before serving.
Notes
- Chill the dough for 30 minutes if your kitchen is warm to prevent spreading.
- Do not overbake, remove when edges are lightly golden for the best texture.
- Store in an airtight container at room temperature for up to one week.
