  • 1 large yellow onion, thinly sliced

  • 1 ½ cups vegetable broth
  • 1 ½ teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme

Instructions

  1. Heat a cast iron skillet over medium heat.
  2. Add olive oil and butter. Once melted, add sliced onions and cook for 8–10 minutes until golden and soft.
  3. Add minced garlic and cook for 1 more minute.
  4. Spread onions out in the skillet and layer the sliced potatoes on top.
  5. Sprinkle in salt, pepper, paprika, and thyme. Pour broth evenly over the mixture.
  6. Cover and reduce heat to low. Simmer for 25–30 minutes, stirring occasionally, until potatoes are tender and the broth has thickened into a gravy.
  7. Adjust seasoning if needed. Add a splash more broth if mixture is too thick.
  8. Serve hot, garnished with fresh herbs if desired.
