- 5 medium yellow potatoes, thinly sliced
- 1 large yellow onion, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 ½ cups vegetable broth
- 1 ½ teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- ½ teaspoon dried thyme
Instructions
- Heat a cast iron skillet over medium heat.
- Add olive oil and butter. Once melted, add sliced onions and cook for 8–10 minutes until golden and soft.
- Add minced garlic and cook for 1 more minute.
- Spread onions out in the skillet and layer the sliced potatoes on top.
- Sprinkle in salt, pepper, paprika, and thyme. Pour broth evenly over the mixture.
- Cover and reduce heat to low. Simmer for 25–30 minutes, stirring occasionally, until potatoes are tender and the broth has thickened into a gravy.
- Adjust seasoning if needed. Add a splash more broth if mixture is too thick.
- Serve hot, garnished with fresh herbs if desired.
