- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1 to 2 tablespoons cold water
- 7 ounces dark chocolate, chopped
- 1 cup heavy cream
- 1/4 cup whole milk
- 2 large eggs
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and set a rack in the middle.
- In a bowl, combine flour, sugar, and salt. Cut in cold butter until crumbly. Add egg yolk and cold water to form a dough.
- Roll out the dough and press into a 9-inch tart pan. Prick the base and blind bake with parchment and weights for 15 minutes. Remove weights and bake another 5–7 minutes.
- Heat cream and milk until just simmering. Pour over chopped chocolate and whisk until smooth. Stir in eggs, vanilla, and salt.
- Pour filling into cooled crust and bake for 18–20 minutes until edges are set and center is slightly wobbly.
- Let cool to room temperature before slicing. Serve plain or with toppings like whipped cream or berries.
