Ingredients

  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1 to 2 tablespoons cold water
  • 7 ounces dark chocolate, chopped
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and set a rack in the middle.
  2. In a bowl, combine flour, sugar, and salt. Cut in cold butter until crumbly. Add egg yolk and cold water to form a dough.
  3. Roll out the dough and press into a 9-inch tart pan. Prick the base and blind bake with parchment and weights for 15 minutes. Remove weights and bake another 5–7 minutes.
  4. Heat cream and milk until just simmering. Pour over chopped chocolate and whisk until smooth. Stir in eggs, vanilla, and salt.
  5. Pour filling into cooled crust and bake for 18–20 minutes until edges are set and center is slightly wobbly.
  6. Let cool to room temperature before slicing. Serve plain or with toppings like whipped cream or berries.
