- 200g all-purpose flour
- 100g unsalted butter, cold and cubed
- 70g powdered sugar
- 1 large egg yolk
- 1 tsp vanilla extract
- 250ml heavy cream
- 250g white chocolate, chopped
- 300g fresh strawberries, hulled and halved
- Powdered sugar, for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease a tart pan.
- In a bowl, mix flour and powdered sugar. Add cold butter and rub with fingertips until the mixture is crumbly.
- Add egg yolk and vanilla extract. Knead lightly until dough forms. Chill for 20 minutes.
- Roll out the dough and press into the tart pan. Prick the base with a fork.
- Blind bake using pie weights for 15 minutes. Remove weights and bake another 10 minutes. Let cool.
- Heat the heavy cream until hot, then pour over chopped white chocolate. Let sit 1 minute, then stir until smooth.
- Pour the cream into the cooled crust and smooth it out. Chill for at least 2 hours until set.
- Top with fresh strawberries and dust with powdered sugar before serving.
Notes
- Chill the dough before baking to prevent shrinkage.
- Use quality white chocolate for best texture and flavor.
- Add lemon zest to the cream for a citrusy twist.
