- 4 cups sliced yellow squash
- 1 small onion, chopped
- 4 tablespoons butter, divided
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 egg, beaten
- 1 teaspoon salt

- 1 cup crushed buttery crackers
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Sauté sliced squash and chopped onion in 2 tablespoons butter until tender.
- In a bowl combine sour cream, shredded cheddar cheese, beaten egg, salt, and pepper.
- Fold the cooked squash mixture into the creamy mixture.
- Grease an 8 by 8 inch baking dish and pour the casserole mixture inside.
- Melt the remaining butter, mix with crushed crackers, and sprinkle evenly on top.
- Bake for 25 to 30 minutes until golden and bubbly.
Notes
- Sauté the squash long enough to release excess moisture.
