  • 1 small onion, chopped
  • 4 tablespoons butter, divided
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 egg, beaten

  • 1/2 teaspoon black pepper
  • 1 cup crushed buttery crackers

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Sauté sliced squash and chopped onion in 2 tablespoons butter until tender.
  3. In a bowl combine sour cream, shredded cheddar cheese, beaten egg, salt, and pepper.
  4. Fold the cooked squash mixture into the creamy mixture.
  5. Grease an 8 by 8 inch baking dish and pour the casserole mixture inside.
  6. Melt the remaining butter, mix with crushed crackers, and sprinkle evenly on top.
  7. Bake for 25 to 30 minutes until golden and bubbly.
