- 4 puff pastry sheets
- 300 g (10 oz) fresh spinach, wilted and well drained
- 400 g (14 oz) ricotta cheese
- 1/2 cup grated Parmesan (about 50 g)
- 2 garlic cloves, minced
- 1 large egg (for the filling)
- 1/4 teaspoon ground nutmeg
- Salt and black pepper, to taste
- 1 egg yolk beaten with 1 teaspoon water (for egg wash)
- 2 tablespoons sesame seeds (optional)
Instructions
- Preheat: Preheat your oven to 200°C (400°F) or preheat your air fryer to 180°C (350°F).
- Prepare spinach: Wilt fresh spinach in a hot pan until just collapsed, then transfer to a strainer or clean towel and squeeze out as much moisture as possible. Chop finely once drained.
- Combine filling: In a mixing bowl, stir together ricotta, drained chopped spinach, grated Parmesan, minced garlic, 1 large egg, nutmeg, salt, and black pepper until smooth and well combined. Chill briefly if the mixture is soft.
- Prepare pastry: Lay puff pastry sheets on a lightly floured surface. Cut each sheet in half lengthwise to create rectangles.
- Assemble rolls: Place a strip of filling along one long edge of each pastry rectangle, leaving a small border. Roll tightly away from the filling, sealing the edge with a little of the beaten egg. Trim ends if desired.
- Egg wash and seeds: Place rolls seam-side down on a parchment-lined baking tray or in the air fryer basket. Brush tops with the beaten egg yolk mixture and sprinkle sesame seeds if using.
- Cook: Bake in the oven for about 25 minutes until golden and crisp, or air fry at 180°C (350°F) for about 15 minutes, turning halfway if your air fryer recommends it, until golden and puffed.
- Rest and serve: Allow rolls to cool for 5 minutes to set, then slice or serve whole. Enjoy warm with your choice of dip or salad.
Notes
- To avoid soggy filling, make sure spinach is thoroughly drained or squeezed.
- You can assemble rolls ahead and refrigerate for up to 24 hours before baking, or freeze unbaked to cook later.
- Brush generously with egg wash for the best golden color.
- If using frozen spinach, thaw fully and press out all excess liquid before combining.
