Description

Steak and Queso Rice is a rich, savory dish combining tender, seasoned steak strips with creamy, cheesy queso sauce and fluffy rice. It’s the ultimate comfort food with a Tex-Mex twist—perfect for a weeknight dinner or a satisfying lunch bowl.


Ingredients

  • 1 lb sirloin or flank steak, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 2 cups cooked white or jasmine rice
  • 1/2 tbsp butter
  • 1/2 cup diced onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced tomatoes (canned or fresh)
  • 3/4 cup queso cheese sauce
  • 1/4 cup milk (to thin queso if needed)
  • 2 tbsp chopped fresh cilantro (optional)

Instructions

  1. Season the steak slices with cumin, smoked paprika, garlic powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add steak and sear for 2–3 minutes per side until browned and cooked through. Remove from skillet and set aside.
  3. In the same skillet, melt butter and sauté onion and bell pepper for 3–4 minutes until softened. Add tomatoes and cook another 1–2 minutes.
  4. Add the cooked rice to the skillet and mix well to combine with the veggies.
  5. Reduce heat to low, then stir in the queso cheese sauce and milk. Mix until creamy and heated through. Adjust consistency with more milk if needed.
  6. Return the steak to the skillet and gently toss to coat with the queso rice mixture.
  7. Top with chopped cilantro before serving, if desired.

Notes

  • Use freshly cooked rice or day-old rice for the best texture.
  • Swap steak with grilled chicken or shrimp for variety.
  • Add jalapeños or hot sauce if you like it spicy.
  • Top with crushed tortilla chips for crunch.
