- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar (for crust)
- 24 ounces cream cheese, softened
- 2 medium ripe bananas, mashed
- 1 cup granulated sugar (for filling)
- 1 cup sour cream
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 cups fresh strawberries, sliced
- 1/4 cup strawberry jam, warmed
Instructions
- Preheat oven to 325°F (163°C) and prepare a water bath by filling a baking dish halfway with hot water.
- In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press firmly into the bottom of a greased springform pan.
- Wrap the outside of the pan with aluminum foil to prevent leaks.
- Beat cream cheese until smooth, then add sugar, mashed bananas, sour cream, eggs, and vanilla. Mix until combined. Pour over crust.
- Place the pan in the water bath and bake for 55–65 minutes until the center is just set.
- Turn off oven, crack the door, and let cheesecake cool inside for 1 hour. Refrigerate at least 4 hours or overnight.
- Top with sliced strawberries and brush with warm strawberry jam before serving.

- Always use ripe bananas for natural sweetness.
- Bake the crust for 10 minutes before adding filling to avoid sogginess.
- For clean slices, dip your knife in hot water between cuts.
