- 1 and 1/2 cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted
- 1/4 cup granulated sugar (for crust)
- 2/3 cup granulated sugar (for filling)
- 16 ounces cream cheese, softened
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup fresh strawberries, chopped
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
Instructions
- Preheat oven to 325°F (165°C) and line an 8×8 baking pan with parchment paper.
- Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into pan and bake for 10 minutes. Let cool.
- Beat cream cheese until smooth. Add remaining sugar, sour cream, vanilla, and eggs one at a time. Blend well.
- Pour filling over crust and smooth out.
- In a saucepan, cook strawberries, lemon juice, and cornstarch for 5–7 minutes until thickened. Let cool.
- Dollop strawberry sauce over cheesecake layer and swirl with a toothpick.
- Bake for 35–40 minutes until center is set but slightly jiggly. Cool to room temperature.
- Refrigerate for at least 4 hours or overnight before slicing and serving.
