- 1/2 cup powdered sugar (for crust)
- 3/4 cup unsalted butter, softened
- 1 cup fresh strawberries, pureed
- 1 cup granulated sugar
- 3 large eggs
- 1/3 cup fresh lemon juice
- 1 tablespoon fresh lemon zest
- 1/4 cup all purpose flour (for filling)
- 2 tablespoons powdered sugar (for dusting)
Instructions
- Preheat oven to 350 degrees F and line an 8×8 inch baking pan with parchment paper.
- In a bowl combine 1 1/2 cups flour, 1/2 cup powdered sugar, and softened butter until a soft dough forms.
- Press the crust mixture evenly into the bottom of the prepared pan.
- Bake the crust for 15 minutes until lightly golden.
- In a separate bowl whisk together strawberry puree, granulated sugar, eggs, lemon juice, lemon zest, and 1/4 cup flour until smooth.
- Pour the filling over the warm crust.
- Bake for 20 to 25 minutes until the center is set but slightly soft.
- Cool completely at room temperature, then refrigerate for at least 2 hours.
- Dust with 2 tablespoons powdered sugar before slicing into 16 bars.
Notes
- Use ripe fresh strawberries for the best flavor and natural color.
- Chill thoroughly before slicing for clean edges.
