- 2 sheets puff pastry, thawed
- 2 cups fresh strawberries, chopped
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 egg, beaten
- Coarse sugar (optional), for sprinkling
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix strawberries, sugar, cornstarch, lemon juice, and vanilla extract. Set aside.
- Roll out thawed puff pastry sheets on a lightly floured surface and cut each sheet into 4 squares.
- Spoon a small amount of strawberry filling onto one half of each square, fold into triangles, and crimp edges with a fork to seal. Cut a small slit in the top of each turnover.
- Place turnovers on baking sheet, brush with beaten egg, and sprinkle with coarse sugar if desired.
- Bake for 18–20 minutes until golden and puffed.
- Let cool for 10 minutes before serving.
Notes
- Keep puff pastry cold for best results.
- Chill assembled turnovers before baking for maximum puff.
- Add a layer of cream cheese under the fruit for extra richness.
- Store leftovers in an airtight container for up to 4 days.
