This Summer Berry Galette features a golden, flaky crust wrapped around a bubbling mix of fresh berries. It’s the perfect rustic dessert for warm days and easy entertaining.

- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 2 tablespoons granulated sugar (for dough)
- 1/3 cup granulated sugar (for filling)
- 1/4 teaspoon salt
- 3 to 5 tablespoons ice water
- 2 1/2 cups mixed fresh berries (blueberries, raspberries, strawberries, blackberries)
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1 egg, beaten (for egg wash)
- 1 tablespoon coarse sugar
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix flour, 2 tablespoons sugar, and salt. Cut in cold butter until crumbly. Add ice water one tablespoon at a time until dough forms.
- Roll out the dough into a 12-inch circle on a floured surface. Transfer to the lined baking sheet.
- In another bowl, gently toss berries with 1/3 cup sugar, cornstarch, and lemon juice. Spoon into center of dough, leaving a 2-inch border.
- Fold the dough edges over the filling, pleating as needed. Brush crust with beaten egg and sprinkle with coarse sugar.
- Bake for 35–40 minutes until crust is golden and filling is bubbling.
- Let cool at least 15 minutes before serving. Enjoy warm or at room temperature.
Notes
- Use a mix of ripe berries for best flavor.
- Don’t overfill the galette to avoid soggy crust.
- Chill the dough before rolling for better flakiness.
- Top with ice cream or whipped cream for an extra treat.
