Description

  • 1/2 cup brown sugar, packed
  • 1 large egg

  • 1 cup pumpkin puree

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a bowl.
  3. In a separate bowl, cream softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in egg, vanilla extract, and pumpkin puree until smooth.
  5. Gradually mix dry ingredients into wet ingredients just until combined.
  6. Scoop tablespoons of dough onto prepared baking sheet.
  7. Bake for 12 to 15 minutes until edges are set and centers remain soft.
  8. Cool on baking sheet for 5 minutes, then transfer to a wire rack.
