  • 500g prawns, peeled and deveined
  • 3 tablespoons sweet chili sauce
  • 1 cup rice, uncooked
  • 2 cups Asian greens (e.g., bok choy, Chinese broccoli), chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tablespoons soy sauce
  • 1 lime, cut into wedges

Instructions

  1. Heat a wok or frying pan over medium-high heat and get your rice cooking in a pot or rice cooker.
  2. In a small bowl, mix the sweet chili sauce, soy sauce, and a bit of lime juice. Set aside.
  3. Heat oil in your wok or frying pan. Add garlic and ginger and stir-fry for about 30 seconds.
  4. Add prawns to the pan and stir-fry for 2-3 minutes until pink. Toss in the Asian greens and cook for another 2-3 minutes.
