- 500g prawns, peeled and deveined
- 3 tablespoons sweet chili sauce
- 1 cup rice, uncooked
- 2 cups Asian greens (e.g., bok choy, Chinese broccoli), chopped
- 2 cloves garlic, minced
- 1-inch piece ginger, minced
- 2 tablespoons soy sauce
- 1 lime, cut into wedges
Instructions
- Heat a wok or frying pan over medium-high heat and get your rice cooking in a pot or rice cooker.
- In a small bowl, mix the sweet chili sauce, soy sauce, and a bit of lime juice. Set aside.
- Heat oil in your wok or frying pan. Add garlic and ginger and stir-fry for about 30 seconds.
- Add prawns to the pan and stir-fry for 2-3 minutes until pink. Toss in the Asian greens and cook for another 2-3 minutes.
- Pour the sweet chili sauce mixture over the prawns and greens, stirring to coat everything evenly. Let cook for another 2 minutes.
- Adjust seasoning with lime juice and soy sauce as needed.
- Serve over cooked rice and garnish with lime wedges and fresh herbs if desired.
