Ingredients
- Puff pastry: 1 sheet, thawed
- Sweet potatoes: 2 medium, peeled and cubed
- Red onions: 2 large, thinly sliced
- Olive oil: 2 tablespoons
- Feta cheese: 150 grams, crumbled
- Fresh thyme: 1 teaspoon
- Balsamic vinegar: 1 tablespoon
- Egg: 1 beaten
- Salt and black pepper: to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
- Toss sweet potato cubes with olive oil, salt, and pepper. Roast for 20 minutes until tender.
- In a pan, heat olive oil over medium heat. Add onions and cook for 15 minutes until caramelized, stirring often. Add balsamic vinegar and thyme, then set aside.
- Roll out puff pastry on a lined baking tray. Spread caramelized onions evenly, top with roasted sweet potatoes, and sprinkle half of the feta cheese.
- Brush the pastry edges with beaten egg and bake for 25 minutes until golden and puffed.
- Top with remaining feta and fresh thyme leaves. Slice and serve warm or at room temperature.
