Description

A golden, flaky tart filled with roasted sweet potatoes, caramelized onions, and creamy feta cheese. Perfect for brunch, lunch, or a light dinner, this dish combines sweetness, saltiness, and buttery richness in every bite.


Ingredients

  • Puff pastry: 1 sheet, thawed
  • Sweet potatoes: 2 medium, peeled and cubed
  • Red onions: 2 large, thinly sliced
  • Olive oil: 2 tablespoons
  • Feta cheese: 150 grams, crumbled
  • Fresh thyme: 1 teaspoon
  • Balsamic vinegar: 1 tablespoon
  • Egg: 1 beaten
  • Salt and black pepper: to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. Toss sweet potato cubes with olive oil, salt, and pepper. Roast for 20 minutes until tender.
  3. In a pan, heat olive oil over medium heat. Add onions and cook for 15 minutes until caramelized, stirring often. Add balsamic vinegar and thyme, then set aside.
  4. Roll out puff pastry on a lined baking tray. Spread caramelized onions evenly, top with roasted sweet potatoes, and sprinkle half of the feta cheese.
  5. Brush the pastry edges with beaten egg and bake for 25 minutes until golden and puffed.
  6. Top with remaining feta and fresh thyme leaves. Slice and serve warm or at room temperature.
