Description

  • 1 medium onion, finely chopped
  • 1 small carrot, diced
  • 1 celery stalk, diced
  • 3 garlic cloves, minced
  • 500 grams ground beef
  • 2 tablespoons tomato paste
  • 800 grams crushed tomatoes
  • 1/2 cup whole milk
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 400 grams tagliatelle pasta
  • Freshly grated Parmesan cheese for serving
  • Fresh basil or parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion, carrot, and celery, and sauté until softened.
  2. Stir in garlic and cook until fragrant, then add the ground beef. Cook until browned.
  3. Mix in tomato paste and crushed tomatoes. Season with oregano, salt, and pepper.
  4. Pour in milk, reduce heat, and let simmer gently for 45–60 minutes, stirring occasionally.
  5. Meanwhile, cook tagliatelle in salted boiling water until al dente. Drain, reserving a cup of pasta water.
  6. Toss the pasta with the sauce, adding pasta water as needed for a silky finish.
  7. Serve hot, topped with Parmesan cheese and fresh basil or parsley.
