- 12 large jalapeños
- 8 oz cream cheese, softened
- 1 cup chopped smoked brisket
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 12 slices thick-cut bacon
- 1/3 cup barbecue sauce
Instructions
- Preheat grill to medium-high (375°F) or oven to 400°F.
- Slice each jalapeño lengthwise on one side and remove seeds and membranes.
- In a bowl, mix cream cheese, chopped brisket, garlic powder, onion powder, salt, and pepper.
- Stuff each jalapeño with the brisket-cheese mixture.
- Wrap each stuffed pepper with a slice of bacon and secure with a toothpick.
- Grill or bake for 20–25 minutes, turning occasionally, until bacon is crisp and peppers are tender.
- Brush with barbecue sauce during the last 5 minutes of cooking and let caramelize.
- Remove from grill or oven, rest for 5 minutes, and serve warm.
Notes
- Use gloves when handling jalapeños to avoid skin irritation.
- Pre-cook bacon slightly for extra crispness if desired.
- For less heat, remove all seeds and ribs.
