- 4 large egg whites, room temperature
- 1 cup granulated sugar
- 1 teaspoon cornstarch
- 1 teaspoon white vinegar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream, cold
- 2 tablespoons powdered sugar
- 1 cup fresh strawberries, sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries
Instructions
- Preheat oven to 250 degrees F and line a baking sheet with parchment paper.
- Beat egg whites until soft peaks form. Gradually add granulated sugar, beating until stiff glossy peaks form. Fold in cornstarch, white vinegar, and vanilla extract.
- Spoon meringue onto parchment and shape into an 8 inch round with slightly raised edges.
- Bake for 60 minutes. Turn off oven and let cool inside for at least 1 hour.
- Whip heavy cream with powdered sugar until soft peaks form.
- Top cooled meringue with whipped cream and fresh strawberries, blueberries, and raspberries.
- Slice gently and serve immediately.

- Ensure bowl is completely grease free before whipping egg whites.
