- 1 ½ cups mascarpone cheese, room temperature
- 3 large egg yolks
- ½ cup granulated sugar
- 1 cup heavy cream
- 1 ¼ cups strong brewed coffee, completely cooled
- 24 ladyfingers
- 2 tablespoons unsweetened cocoa powder
Instructions
- In a mixing bowl, beat the egg yolks and granulated sugar until pale and thick.
- Add the mascarpone cheese and mix until smooth and creamy.
- In a separate bowl, whip the heavy cream to soft peaks, then gently fold it into the mascarpone mixture.
- Quickly dip each ladyfinger into the cooled coffee and arrange a single layer in an 8×8 inch dish.
- Spread half of the mascarpone mixture evenly over the soaked ladyfingers.
- Add another layer of dipped ladyfingers on top.
- Spread the remaining mascarpone mixture evenly over the second layer.
- Cover and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, dust the top evenly with unsweetened cocoa powder using a fine sieve.
- Slice and serve chilled.
