Description

Buttery shortbread cookies studded with sweet toffee bits and crunchy toasted pecans, perfect for holidays, gifting, or enjoying with a warm cup of tea.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup toffee bits
  • 1/2 cup chopped toasted pecans

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter and powdered sugar until light and fluffy. Mix in vanilla extract.
  3. Add flour and salt, mixing until just combined. Stir in toffee bits and pecans.
  4. Shape dough into two logs about 2 inches in diameter. Wrap in plastic wrap and chill for at least 1 hour.
  5. Slice chilled dough into 1/4-inch rounds and place on baking sheets.
  6. Bake for 12–15 minutes, or until edges are lightly golden.
  7. Cool slightly on baking sheets, then transfer to wire racks to cool completely. Serve and enjoy.

Notes

  • Toast pecans before adding for deeper flavor.
  • Chill dough thoroughly to prevent spreading.
  • For extra flair, drizzle cooled cookies with melted chocolate.
