- 12 ounces dried pasta
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- 2 tablespoons harissa paste
- 1 can (14 ounces) crushed tomatoes
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 ounces feta cheese, crumbled
- 1 tablespoon honey
- 2 tablespoons fresh parsley or basil, chopped
Instructions
- Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve 1 cup of pasta water, then drain.
- Heat olive oil in a wide pan over medium heat. Add the minced garlic and harissa paste, stirring for about 30 seconds until fragrant.
- Stir in the crushed tomatoes, chickpeas, salt, and black pepper. Simmer for 10 minutes until slightly thickened.
- Add the cooked pasta to the sauce, tossing well and adding reserved pasta water as needed to loosen the sauce.
- Preheat the oven to broil. Place the crumbled feta on a baking tray, drizzle with honey, and broil for 3 to 5 minutes until lightly charred.
- Spoon the charred feta over the pasta, finish with fresh herbs, and serve warm.
Notes
- Adjust the amount of harissa to control the heat level.
- Always save pasta water to help the sauce cling better.
- Watch the feta closely while broiling to avoid burning.
