  • 1 box angel food cake mix
  • 1/2 cup vegetable oil
  • 1 (20 oz) can crushed pineapple with juice
  • 1 (8 oz) tub Cool Whip, thawed
  • 1 (3.4 oz) box pistachio pudding mix
  • 2/3 cup whole milk
  • 1 (3.4 oz) box pistachio pudding (for topping layer)
  • Chopped pistachios, for decoration

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a large bowl, mix eggs, angel food cake mix, vegetable oil, and crushed pineapple (with juice) until well combined.
  3. Pour the batter into the prepared baking dish and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  4. Let the cake cool completely in the pan.
  5. In a separate bowl, whisk together 1 box of pistachio pudding mix and whole milk until thickened (about 2 minutes).
  6. Fold in the Cool Whip until smooth and creamy.
  7. Spread the pistachio topping evenly over the cooled cake.
  8. Sprinkle chopped pistachios on top for garnish and chill for at least 1 hour before serving.
