Description

A creamy and elegant spread made with tender trout, fresh dill, and juicy green grapes. This light yet flavorful dish is perfect for appetizers, picnics, or a refined starter that feels both rustic and luxurious.

Ingredients

Scale
  • 250 g cooked trout fillet, flaked
  • 80 g unsalted butter, softened
  • 2 tbsp Greek yogurt or crème fraîche
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp lemon juice
  • 810 green grapes, halved
  • 1/2 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • 1 tsp olive oil
  • Baguette or crackers for serving

Instructions

  1. Flake the cooked trout into a mixing bowl using a fork.
  2. Add softened butter, Greek yogurt, lemon juice, chopped dill, salt, and pepper.
  3. Gently fold the mixture until just combined, keeping small flakes of trout visible.
  4. Spoon the mixture into a small serving bowl or jar, pressing lightly to remove air pockets.
  5. Cover with plastic wrap and refrigerate for at least 1 hour to let the flavors develop.
  6. Before serving, drizzle olive oil on top and garnish with halved green grapes and dill.
  7. Serve chilled with toasted baguette slices or crackers.

Notes

  • Use fresh dill for the best flavor and aroma.
  • If using smoked trout, reduce added salt.
  • Let the rillettes rest at room temperature for 10 minutes before serving for a creamier texture.
