- 2 cups cooked turkey, shredded or chopped
- 3 cups leftover stuffing, chilled
- 2 large eggs
- 1/2 cup all-purpose flour
- 2 carrots, diced
- 2 celery stalks, diced
- 1 small onion, diced
- 2 garlic cloves, minced
- 6 cups turkey or chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped
Instructions
- Set a large soup pot over medium heat.
- In a bowl, gently combine the cold stuffing with eggs and flour until it holds together. Set aside.
- Add a drizzle of oil to the pot, then sauté onion, carrots, celery, and garlic until soft, about 5–7 minutes.
- Pour in the broth and stir in the turkey, salt, pepper, and thyme. Bring to a gentle simmer.
- Scoop spoonfuls of the stuffing mixture and drop them gently into the simmering broth. Cover and cook for 15–18 minutes.
- Sprinkle fresh parsley and adjust seasoning to taste.
- Ladle into bowls and serve hot.
Notes
- Chilling the stuffing first makes it easier to form dumplings.
- Do not boil once dumplings are added, just keep at a gentle simmer.
- Add extra broth when reheating if needed.
