Instructions

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add diced onion, carrots, and celery. Sauté for about 5 minutes until softened.
  3. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Add chopped cabbage, diced tomatoes with juices, vegetable broth, salt, and black pepper. Stir to combine.
  5. Bring to a gentle boil, then reduce heat and simmer uncovered for 25 minutes until vegetables are tender.
  6. Stir in fresh parsley and adjust seasoning if needed.
