- 2 medium carrots, sliced
- 2 celery stalks, chopped
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 can (14 ounces) diced tomatoes
- 6 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large soup pot over medium heat.
- Add diced onion, carrots, and celery. Sauté for about 5 minutes until softened.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add chopped cabbage, diced tomatoes with juices, vegetable broth, salt, and black pepper. Stir to combine.
- Bring to a gentle boil, then reduce heat and simmer uncovered for 25 minutes until vegetables are tender.
- Stir in fresh parsley and adjust seasoning if needed.
- Serve warm and enjoy.
Notes
- For softer cabbage, simmer an extra 5 minutes.
- Add a squeeze of lemon juice before serving for brightness.
