Description

  • 1/2 cup whole milk
  • 1 cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar
  • 2 teaspoons pure vanilla extract (for frosting)
  • 2 to 3 tablespoons heavy cream

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and line a 12 cup muffin pan with paper liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, beat softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then mix in vanilla extract.
  5. Alternate adding dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients. Mix gently until just combined.
  6. Fill cupcake liners about two thirds full with batter.
  7. Bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool cupcakes completely on a wire rack before frosting.
  9. For the frosting, beat butter until creamy, gradually add powdered sugar, then mix in vanilla extract and heavy cream. Beat until smooth and fluffy.
  10. Pipe or spread frosting onto cooled cupcakes and serve.
