Description

Golden and chewy coconut macaroons made quickly in the air fryer with sweet shredded coconut and simple pantry ingredients.


Ingredients

  • 2 1/2 cups sweetened shredded coconut
  • 2 large egg whites
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup semisweet chocolate, melted (optional)

Instructions

  1. Preheat air fryer to 320 degrees Fahrenheit for 3 minutes.
  2. In a mixing bowl whisk egg whites until slightly frothy.
  3. Stir in granulated sugar, vanilla extract, and salt.
  4. Fold in sweetened shredded coconut until evenly combined.
  5. Scoop small mounds and shape into compact rounds.
  6. Lightly spray air fryer basket or use parchment liner.
  7. Place macaroons in basket leaving space between each.
  8. Air fry for 8 to 10 minutes until golden brown.
  9. Cool for 5 minutes before removing.
  10. Dip bottoms in melted semisweet chocolate if desired and let set before serving.
