- 2 celery stalks, finely diced
- 1/4 cup red onion, finely diced
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice

- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Place chopped chicken in a large bowl.
- Add diced celery and red onion.
- Mix mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Fold dressing into chicken mixture until coated.
- Stir in parsley and chill 30 minutes before serving.
