Scale
- 1 cup red lentils, rinsed
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 cup diced potatoes, small cubes
- 4 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 4 small prepared vegetable samusas, cut into bite size pieces
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon fresh lemon juice
Instructions
- Place a large pot over medium heat and add olive oil.
- Add diced onion and sauté for 3 to 4 minutes until softened.
- Stir in garlic and ginger and cook for about 1 minute until fragrant.
- Add turmeric, cumin, and paprika, stirring to toast the spices briefly.
- Add rinsed red lentils, diced potatoes, vegetable broth, salt, and black pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce heat and simmer for 20 to 25 minutes until lentils and potatoes are tender and the soup thickens.
- Stir in fresh lemon juice and adjust seasoning if needed.
- Ladle the soup into bowls and top with pieces of vegetable samusa.
- Sprinkle with chopped fresh cilantro and serve immediately.
Notes
- Rinse lentils thoroughly before cooking to remove excess starch.
- Add samusa pieces just before serving to prevent them from becoming too soft.
- If the soup becomes too thick, add a splash of vegetable broth or water to loosen it.
- The lentil base can be made ahead and refrigerated for up to 4 days.
