- 12 large eggs
- 1/4 cup mayonnaise
- 2 tablespoons heavy cream
- 1/3 cup grated parmesan cheese
- 3 ounces pancetta, diced
- 1 teaspoon freshly cracked black pepper
- 1/4 teaspoon salt
- 1 tablespoon chopped parsley, optional
Instructions
- Boil eggs for 10 minutes, cool in ice water, and peel.
- Cook pancetta until crispy and drain.
- Remove yolks and mash with mayonnaise, heavy cream, parmesan, salt, and pepper until smooth.
- Pipe or spoon filling into egg whites.
- Top with crispy pancetta and extra black pepper.
- Serve chilled or at room temperature.
Notes
- Add pancetta just before serving for crisp texture.
- Mash yolks until very smooth for creamy filling.
- Store covered in refrigerator up to one day.
