  • Total Time: 45 minutes
  • Yield: 6 servings 1x
  • Diet: Vegetarian

Description

A warm and comforting vegetable-based stuffing made with tender roasted cauliflower, sautéed onions and celery, fragrant herbs, and a touch of buttery richness. A lighter twist on a classic holiday favorite that works beautifully year round.

Ingredients

Scale
  • 1 large head cauliflower, cut into small florets
  • 2 celery stalks, finely chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 1/2 cup vegetable broth
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. Cut the cauliflower into small, even florets and prepare all vegetables and herbs.
  3. Melt the butter in a large skillet over medium heat.
  4. Add the diced onion and chopped celery to the skillet and sauté until softened, about 5 to 7 minutes.
  5. Stir in the minced garlic, dried thyme, and dried sage, cooking for 1 minute until fragrant.
  6. Add the cauliflower florets to the skillet and toss to coat evenly with the sautéed mixture.
  7. Transfer everything to the prepared baking dish and pour the vegetable broth evenly over the top.
  8. Bake for 25 to 30 minutes until the cauliflower is tender and lightly golden.
  9. Remove from the oven, sprinkle with fresh parsley, adjust seasoning with salt and black pepper if needed, and serve warm.

Notes

  • Roast until lightly golden for the best flavor and texture.
  • Do not overcrowd the baking dish to allow proper roasting.
  • Adjust herbs to taste or add poultry seasoning for convenience.
  • Store leftovers in an airtight container for up to 3 days.
