- 1 large head cauliflower, cut into small florets
- 2 celery stalks, finely chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 tablespoons unsalted butter
- 1/2 cup vegetable broth
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
- Cut the cauliflower into small, even florets and prepare all vegetables and herbs.
- Melt the butter in a large skillet over medium heat.
- Add the diced onion and chopped celery to the skillet and sauté until softened, about 5 to 7 minutes.
- Stir in the minced garlic, dried thyme, and dried sage, cooking for 1 minute until fragrant.
- Add the cauliflower florets to the skillet and toss to coat evenly with the sautéed mixture.
- Transfer everything to the prepared baking dish and pour the vegetable broth evenly over the top.
- Bake for 25 to 30 minutes until the cauliflower is tender and lightly golden.
- Remove from the oven, sprinkle with fresh parsley, adjust seasoning with salt and black pepper if needed, and serve warm.
Notes
- Roast until lightly golden for the best flavor and texture.
- Do not overcrowd the baking dish to allow proper roasting.
- Adjust herbs to taste or add poultry seasoning for convenience.
