- 2 cans sardines in olive oil, about 3.75 ounces each, lightly drained
- 1 ½ cups shredded mozzarella cheese
- ½ cup grated cheddar cheese
- 1 medium tomato, finely diced
- 1 small onion, finely chopped
- 2 large eggs
- ¼ cup milk
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat oven to 375°F or 190°C.
- In a mixing bowl, gently flake the sardines with a fork.
- Add diced tomato, chopped onion, eggs, milk, salt, and black pepper. Mix until evenly combined.
- Lightly grease an 8 by 8 inch baking dish.
- Pour the sardine mixture into the prepared dish and spread evenly.
- Sprinkle mozzarella and cheddar cheese evenly over the top.
- Bake for 25 to 30 minutes, or until the cheese is melted, golden, and the center is set.
- Let rest for 5 to 10 minutes before slicing and serving.
