Description

Ingredients

  • 2 cans sardines in olive oil, about 3.75 ounces each, lightly drained
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated cheddar cheese
  • 1 medium tomato, finely diced
  • 1 small onion, finely chopped
  • 2 large eggs
  • ¼ cup milk
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat oven to 375°F or 190°C.
  2. In a mixing bowl, gently flake the sardines with a fork.
  3. Add diced tomato, chopped onion, eggs, milk, salt, and black pepper. Mix until evenly combined.
  4. Lightly grease an 8 by 8 inch baking dish.
  5. Pour the sardine mixture into the prepared dish and spread evenly.
  6. Sprinkle mozzarella and cheddar cheese evenly over the top.
  7. Bake for 25 to 30 minutes, or until the cheese is melted, golden, and the center is set.
  8. Let rest for 5 to 10 minutes before slicing and serving.
