Description

Classic chicken enchiladas filled with seasoned shredded chicken, topped with red enchilada sauce and melted cheese. A comforting family dinner.


Ingredients

  • 3 cups cooked shredded chicken
  • 8 to 10 corn or flour tortillas
  • 2 cups red enchilada sauce
  • 2 cups shredded cheese
  • 1/2 cup onion, finely diced
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh cilantro, optional

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Mix chicken with onion, garlic powder, cumin, salt, pepper, and a few spoonfuls of sauce.
  3. Warm tortillas until pliable.
  4. Spread sauce in baking dish.
  5. Fill tortillas with chicken mixture, roll, and place seam side down.
  6. Pour remaining sauce over top and sprinkle with cheese.
  7. Bake 20 to 25 minutes until bubbly.
  8. Rest briefly before serving.
