- 3 cups cooked shredded chicken
- 8 to 10 corn or flour tortillas
- 2 cups red enchilada sauce
- 2 cups shredded cheese
- 1/2 cup onion, finely diced
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh cilantro, optional
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- Mix chicken with onion, garlic powder, cumin, salt, pepper, and a few spoonfuls of sauce.
- Warm tortillas until pliable.
- Spread sauce in baking dish.
- Fill tortillas with chicken mixture, roll, and place seam side down.
- Pour remaining sauce over top and sprinkle with cheese.
- Bake 20 to 25 minutes until bubbly.
- Rest briefly before serving.
