- 800 grams boneless skinless chicken thighs, cut into cubes
- 3 tablespoons olive oil
- 2 tablespoons freshly squeezed lemon juice
- 3 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large potatoes, about 900 grams, cut into fries
- 1 tablespoon cornstarch
Instructions
- Preheat oven to 220 C and heat a grill pan over medium heat.
- In a bowl, mix olive oil, lemon juice, garlic, paprika, cumin, salt, and black pepper. Add chicken cubes and toss to coat evenly. Marinate for at least 30 minutes.
- Line a baking tray with parchment paper. Toss cut potatoes with cornstarch and a light drizzle of olive oil.
- Thread marinated chicken evenly onto skewers.
- Roast fries for 30 minutes, turning halfway through. Grill skewers for 12 to 15 minutes, turning occasionally, until fully cooked and lightly charred.
- Let the skewers rest for 5 minutes before serving.
- Serve hot with crispy fries.
Notes
- Soak wooden skewers in water for 20 minutes before grilling to prevent burning.
- Pat potatoes dry before coating to achieve extra crispiness.
- Chicken is fully cooked when internal temperature reaches 75 C.
- Reheat leftovers in the oven to maintain texture.
