Soft baked cinnamon rolls sliced and filled with creamy vanilla ice cream, then frozen into indulgent handheld sandwiches that combine warm spice flavor with cool sweetness.

- 8 refrigerated cinnamon rolls with icing, baked according to package instructions
- 1 quart vanilla ice cream, slightly softened
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 cup chopped pecans (optional)
Instructions
- Preheat oven according to the cinnamon roll package instructions.
- Bake the cinnamon rolls as directed and allow them to cool completely on a rack.
- Line a baking sheet with parchment paper.
- Slice each cooled cinnamon roll horizontally using a serrated knife.
- Place a generous scoop of slightly softened vanilla ice cream onto the bottom half of each roll.
- Sprinkle a small pinch of ground cinnamon over the ice cream if using.
- Gently press the top half of the roll back on to form a sandwich.
- Place the assembled sandwiches on the prepared baking sheet and freeze for at least 1 hour until firm.
- If desired, roll the edges in chopped pecans before serving.
- Serve straight from the freezer and enjoy.
Notes
- Make sure the cinnamon rolls are fully cooled before adding ice cream to prevent melting.
- Do not over soften the ice cream or it may slide out of the sandwich.
- Freeze thoroughly to help the sandwiches hold their shape.
- Store individually wrapped in the freezer for up to 3 days.
