- 1 pound elbow macaroni
- 4 tablespoons unsalted butter
- 1/4 cup all purpose flour
- 3 cups whole milk, warmed
- 2 cups sharp cheddar cheese, freshly shredded
- 1 cup mozzarella cheese, shredded
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheddar for topping, optional
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- Cook elbow macaroni in salted water until al dente. Drain and set aside.
- In a saucepan melt unsalted butter over medium heat. Whisk in all purpose flour and cook for 1 to 2 minutes.
- Gradually whisk in warmed whole milk and cook until thickened and smooth.
- Stir in sharp cheddar and mozzarella until melted and creamy.
- Season with salt and black pepper.
- Combine cooked pasta with cheese sauce until evenly coated.
- Transfer to baking dish and sprinkle extra cheddar on top if desired.
- Bake for 20 to 25 minutes until bubbly and lightly golden.
- Let rest for 5 minutes before serving.
Notes
- Use freshly shredded cheese for best melting.
- Do not overcook pasta before baking.
- Reheat leftovers with a splash of milk for creaminess.
- Store in refrigerator up to 4 days.
