Description

A lighter twist on classic Alfredo made with blended cottage cheese for a creamy, protein-packed sauce that coats every strand of fettuccine. Smooth, garlicky, and finished with parmesan and fresh parsley, this pasta is comforting without feeling heavy.


Ingredients

  • 12 ounces fettuccine pasta
  • 1 1/2 cups full fat cottage cheese
  • 1/2 cup milk
  • 1/2 cup freshly grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Bring a large pot of generously salted water to a boil.
  2. Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  3. While the pasta cooks, add cottage cheese, milk, parmesan cheese, salt, and black pepper to a blender. Blend until completely smooth and creamy.
  4. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to brown it.
  5. Reduce the heat to low and pour the blended sauce into the skillet. Stir gently until warmed through, do not let it boil.
  6. Add the drained pasta to the skillet and toss to coat evenly. Add reserved pasta water a little at a time as needed to loosen the sauce.
  7. Taste and adjust seasoning if necessary.
  8. Remove from heat, garnish with chopped fresh parsley, and serve immediately.
