- 12 ounces fettuccine pasta
- 1 1/2 cups full fat cottage cheese
- 1/2 cup milk
- 1/2 cup freshly grated parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt, or to taste
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- Bring a large pot of generously salted water to a boil.
- Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- While the pasta cooks, add cottage cheese, milk, parmesan cheese, salt, and black pepper to a blender. Blend until completely smooth and creamy.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to brown it.
- Reduce the heat to low and pour the blended sauce into the skillet. Stir gently until warmed through, do not let it boil.
- Add the drained pasta to the skillet and toss to coat evenly. Add reserved pasta water a little at a time as needed to loosen the sauce.
- Taste and adjust seasoning if necessary.
- Remove from heat, garnish with chopped fresh parsley, and serve immediately.

- Keep the heat low when warming the sauce to prevent changes in texture.
- Add pasta water gradually to control the thickness of the sauce.
