Description

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 large red apple, diced
  • 1/2 cup dried cranberries
  • 1/3 cup sliced almonds
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup red onion, finely diced
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Bring quinoa and water to a boil in a saucepan.
  2. Reduce heat, cover, and simmer for 15 minutes until water is absorbed.
  3. Let sit covered for 5 minutes, then fluff and cool completely.
  4. In a large bowl, combine quinoa, apple, cranberries, almonds, parsley, and red onion.
  5. Whisk olive oil, lemon juice, honey, salt, and black pepper in a small bowl.
  6. Pour dressing over salad and toss gently to combine.
  7. Chill for 30 minutes before serving if desired.
