Ingredients

- 1 cup quinoa, rinsed
- 2 cups water
- 1 large red apple, diced
- 1/2 cup dried cranberries
- 1/3 cup sliced almonds
- 1/4 cup fresh parsley, chopped
- 1/4 cup red onion, finely diced
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Bring quinoa and water to a boil in a saucepan.
- Reduce heat, cover, and simmer for 15 minutes until water is absorbed.
- Let sit covered for 5 minutes, then fluff and cool completely.
- In a large bowl, combine quinoa, apple, cranberries, almonds, parsley, and red onion.
- Whisk olive oil, lemon juice, honey, salt, and black pepper in a small bowl.
- Pour dressing over salad and toss gently to combine.
- Chill for 30 minutes before serving if desired.
