French Onion Grilled Cheese

Description

A rich and comforting French onion grilled cheese made with sweet caramelized onions, melty Gruyere, and golden toasted sourdough bread. A delicious twist on the classic soup.


Ingredients

  • 2 large yellow onions, thinly sliced
  • 3 tablespoons unsalted butter, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices sourdough bread
  • 1 cup shredded Gruyere cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Heat 2 tablespoons butter in a large skillet over medium low heat.
  2. Add sliced onions, salt, and black pepper and cook for 25 to 30 minutes, stirring occasionally, until deeply golden and soft.
  3. Remove onions from skillet.
  4. Spread remaining butter on one side of each slice of bread.
  5. Place two slices butter side down in the skillet.
  6. Layer with Gruyere cheese, caramelized onions, and mozzarella cheese.
  7. Top with remaining bread slices, butter side up.
  8. Cook on medium heat for 3 to 4 minutes per side until bread is golden brown and cheese is melted.
  9. Remove from heat, rest briefly, and slice before serving.

  • Cook onions low and slow for best flavor.
  • Use medium heat to avoid burning bread.
