Description
A rich and comforting French onion grilled cheese made with sweet caramelized onions, melty Gruyere, and golden toasted sourdough bread. A delicious twist on the classic soup.

- 2 large yellow onions, thinly sliced
- 3 tablespoons unsalted butter, divided
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 slices sourdough bread
- 1 cup shredded Gruyere cheese
- 1/2 cup shredded mozzarella cheese
Instructions
- Heat 2 tablespoons butter in a large skillet over medium low heat.
- Add sliced onions, salt, and black pepper and cook for 25 to 30 minutes, stirring occasionally, until deeply golden and soft.
- Remove onions from skillet.
- Spread remaining butter on one side of each slice of bread.
- Place two slices butter side down in the skillet.
- Layer with Gruyere cheese, caramelized onions, and mozzarella cheese.
- Top with remaining bread slices, butter side up.
- Cook on medium heat for 3 to 4 minutes per side until bread is golden brown and cheese is melted.
- Remove from heat, rest briefly, and slice before serving.
Notes
- Cook onions low and slow for best flavor.
- Use medium heat to avoid burning bread.
- Freshly shredded cheese melts more smoothly.
