Ingredients

  • 3 cups cooked long grain rice, chilled
  • 1 ½ cups fresh green beans, trimmed and chopped
  • ½ cup carrots, finely diced
  • 2 large eggs, lightly beaten
  • 3 tablespoons green onions, sliced
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Heat a large skillet or wok over medium high heat.
  2. Add 1 tablespoon vegetable oil and scramble the beaten eggs until just set. Remove and set aside.
  3. Add remaining 1 tablespoon vegetable oil to the pan. Stir in garlic, green beans, and carrots. Cook for 3 to 4 minutes until slightly tender but crisp.
  4. Add chilled rice and break up any clumps. Pour soy sauce around the edges and stir fry for 5 to 6 minutes until heated through.
  5. Return scrambled eggs to the pan. Drizzle sesame oil and add green onions, salt, and black pepper. Toss well to combine.
  6. Serve warm and enjoy.

Notes

  • Use day old rice for the best texture.
  • Cook over medium high heat to prevent soggy rice.
  • Taste before adding extra salt since soy sauce contains sodium.
