- 3 cups cooked long grain rice, chilled
- 1 ½ cups fresh green beans, trimmed and chopped
- ½ cup carrots, finely diced
- 2 large eggs, lightly beaten
- 3 tablespoons green onions, sliced
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Heat a large skillet or wok over medium high heat.
- Add 1 tablespoon vegetable oil and scramble the beaten eggs until just set. Remove and set aside.
- Add remaining 1 tablespoon vegetable oil to the pan. Stir in garlic, green beans, and carrots. Cook for 3 to 4 minutes until slightly tender but crisp.
- Add chilled rice and break up any clumps. Pour soy sauce around the edges and stir fry for 5 to 6 minutes until heated through.
- Return scrambled eggs to the pan. Drizzle sesame oil and add green onions, salt, and black pepper. Toss well to combine.
- Serve warm and enjoy.
Notes
- Use day old rice for the best texture.
- Cook over medium high heat to prevent soggy rice.
- Taste before adding extra salt since soy sauce contains sodium.
