Description

- 1 1/2 pounds baby potatoes or Yukon Gold potatoes
- 3 tablespoons unsalted butter, melted
- 3 cloves fresh garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- Wash and thoroughly dry the potatoes.
- Slice each potato hasselback style, cutting thin slices without cutting all the way through.
- In a small bowl, mix melted butter, minced garlic, olive oil, salt, and black pepper.
- Preheat the air fryer to 400°F if required.
- Brush the potatoes generously with the garlic butter mixture, making sure it gets between the slices.
- Place the potatoes in a single layer in the air fryer basket.
- Air fry at 400°F for 15 to 20 minutes until golden brown and fork tender.
- Brush with any remaining garlic butter immediately after cooking.
- Sprinkle with freshly chopped parsley and serve warm.
Notes
- Use chopsticks or wooden spoons alongside the potato to prevent slicing all the way through.
- Do not overcrowd the air fryer basket.
- Dry potatoes well before brushing with butter for better crisping.
- Reheat leftovers in the air fryer for a few minutes to restore crispness.
