Description

  • 2 medium carrots, diced
  • 2 medium potatoes, peeled and diced
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add diced onion, carrots, celery, and garlic. Sauté for 5 to 7 minutes until softened and fragrant.
  3. Stir in the rinsed lentils, diced potatoes, bay leaf, and dried thyme.
  4. Pour in the vegetable broth and stir well to combine.
  5. Bring to a gentle boil, then reduce heat and simmer for 35 to 40 minutes until lentils and potatoes are tender.
  6. Remove the bay leaf and season with salt and black pepper to taste.
  7. Ladle into bowls and serve hot.
