Description

This Greek Salad is a fresh and vibrant Mediterranean classic made with juicy tomatoes, crisp cucumber, red onion, green bell pepper, briny olives, and creamy feta cheese tossed in a simple olive oil and red wine vinegar dressing. A refreshing, no-cook dish perfect for any occasion.


Ingredients

  • 4 medium ripe tomatoes, about 600 grams, cut into large chunks
  • 1 large cucumber, about 300 grams, sliced into thick half moons
  • 1 small red onion, thinly sliced
  • 1 medium green bell pepper, sliced
  • 120 grams black olives, pitted
  • 200 grams feta cheese, cut into large cubes
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and prepare all vegetables by cutting the tomatoes into large chunks, slicing the cucumber into thick half moons, thinly slicing the red onion, and slicing the green bell pepper.
  2. Place the tomatoes, cucumber, red onion, green bell pepper, and black olives into a large mixing bowl.
  3. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper.
  4. Pour the dressing over the vegetables.
  5. Toss gently to combine and evenly coat all ingredients.
  6. Let the salad sit for 5 minutes to allow the flavors to blend.
  7. Add the feta cheese cubes on top.
  8. Serve immediately and enjoy.

Notes

  • Add the feta at the end to keep the cubes intact.
  • Use ripe, in-season tomatoes for the best flavor.
