Description
Greek tomato feta cauliflower kounoupidi made with roasted cauliflower baked in rich tomato sauce and topped with creamy feta cheese.
Ingredients

- 1 large head cauliflower, cut into florets
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 2 cups crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Toss cauliflower with olive oil, salt, and pepper.
- Roast 15 minutes.
- Mix tomatoes, tomato paste, garlic, oregano, and remaining oil.
- Pour sauce over cauliflower and bake 20 minutes.
- Sprinkle feta and bake 5 more minutes.
- Garnish with parsley and serve.
Notes
- Roast first for better flavor.
- Use quality tomatoes.
- Add feta toward the end.
- Store refrigerated up to 4 days.
