Description

Greek tomato feta cauliflower kounoupidi made with roasted cauliflower baked in rich tomato sauce and topped with creamy feta cheese.


Ingredients

Scale
  • 1 large head cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Toss cauliflower with olive oil, salt, and pepper.
  3. Roast 15 minutes.
  4. Mix tomatoes, tomato paste, garlic, oregano, and remaining oil.
  5. Pour sauce over cauliflower and bake 20 minutes.
  6. Sprinkle feta and bake 5 more minutes.
  7. Garnish with parsley and serve.
