Description
A vibrant summer salad made with grilled peaches, fresh greens, creamy goat cheese, toasted pecans, and a sweet balsamic dressing
Ingredients
- Fresh Peaches: 4 medium, halved and pitted
- Mixed Salad Greens: 6 cups
- Goat Cheese: 1/2 cup, crumbled
- Toasted Pecans: 1/3 cup
- Olive Oil: 3 tablespoons, divided
- Balsamic Vinegar: 1 tablespoon
- Honey: 1 tablespoon
- Dijon Mustard: 1 teaspoon
- Salt: 1/4 teaspoon
- Black Pepper: 1/4 teaspoon
Instructions
- Preheat grill or grill pan to medium high heat.
- In a small bowl, whisk together 2 tablespoons olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper until smooth.
- Brush peach halves lightly with the remaining 1 tablespoon olive oil.
- Place peaches cut side down on the grill and cook for 3 to 4 minutes until grill marks form. Flip and grill for another 2 minutes until tender but holding shape.
- Remove peaches from grill and let cool slightly.
- Arrange mixed greens in a large bowl. Top with grilled peaches, crumbled goat cheese, and toasted pecans.
- Drizzle with dressing, toss gently, and serve immediately.
Notes
- Use peaches that are ripe but still firm to prevent falling apart on the grill.
- Toast pecans in a dry skillet for 3 to 5 minutes for extra flavor.
- Dress the salad just before serving to keep greens crisp.
- Grilled peaches and dressing can be prepared a day ahead and stored separately.
