Description

A vibrant summer salad made with grilled peaches, fresh greens, creamy goat cheese, toasted pecans, and a sweet balsamic dressing


Ingredients

  • Fresh Peaches: 4 medium, halved and pitted
  • Mixed Salad Greens: 6 cups
  • Goat Cheese: 1/2 cup, crumbled
  • Toasted Pecans: 1/3 cup
  • Olive Oil: 3 tablespoons, divided
  • Balsamic Vinegar: 1 tablespoon
  • Honey: 1 tablespoon
  • Dijon Mustard: 1 teaspoon
  • Salt: 1/4 teaspoon
  • Black Pepper: 1/4 teaspoon

Instructions

  1. Preheat grill or grill pan to medium high heat.
  2. In a small bowl, whisk together 2 tablespoons olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper until smooth.
  3. Brush peach halves lightly with the remaining 1 tablespoon olive oil.
  4. Place peaches cut side down on the grill and cook for 3 to 4 minutes until grill marks form. Flip and grill for another 2 minutes until tender but holding shape.
  5. Remove peaches from grill and let cool slightly.
  6. Arrange mixed greens in a large bowl. Top with grilled peaches, crumbled goat cheese, and toasted pecans.
  7. Drizzle with dressing, toss gently, and serve immediately.

Notes

  • Use peaches that are ripe but still firm to prevent falling apart on the grill.
  • Toast pecans in a dry skillet for 3 to 5 minutes for extra flavor.
  • Dress the salad just before serving to keep greens crisp.
  • Grilled peaches and dressing can be prepared a day ahead and stored separately.
