Description

A flavorful homemade gyro sandwich made with seasoned chicken, fresh vegetables, warm pita bread, and creamy tzatziki sauce for a satisfying Mediterranean-inspired meal.

  • 1 pound boneless skinless chicken thighs, sliced thin
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 pita bread rounds
  • 1 cup tomatoes, chopped
  • 1 small red onion, thinly sliced
  • 1 cup Greek yogurt
  • 1/2 cup cucumber, grated and drained
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt

Instructions

  1. In a bowl, combine olive oil, 3 cloves minced garlic, oregano, paprika, 1 teaspoon salt, and black pepper. Add sliced chicken and toss well. Marinate for 20 minutes.
  2. Heat a skillet over medium high heat and lightly oil it.
  3. Cook the marinated chicken for 6 to 8 minutes, stirring occasionally, until fully cooked and lightly browned. Remove from heat and let rest.
  4. In a separate bowl, mix Greek yogurt, grated and drained cucumber, lemon juice, 1 clove minced garlic, and 1/4 teaspoon salt to make the tzatziki sauce. Chill for 15 minutes if possible.
  5. Warm the pita bread briefly in the skillet.
  6. Spread tzatziki sauce onto each pita, add cooked chicken, chopped tomatoes, and sliced red onion.
  7. Fold the pita around the filling and serve immediately.

Notes

  • Drain the cucumber thoroughly to prevent watery sauce.
  • Do not overcrowd the skillet when cooking the chicken.
  • Warm the pita just before assembling for best texture.
  • Leftover chicken can be stored in the refrigerator for up to two days.
